Double Chocolate Waffles

Sometimes when it’s summer and you want breakfast, you go a bit nuts.

Beaten egg whites, very fancy.

Retain the egg yolk for the rest of the waffle batter.

Combine it with dry ingredients

Add chocolate chips, for sugary overkill

Remember those egg whites? Now we add them. Frankly, I’m not sure why I can’t just add them in the beginning, you know, with the rest of the egg.

I found that while I did add 2 tablespoons of cocoa, it did not really add anything to the flavour of the waffle; only the subtlest hint of chocolate. Next time, I won’t even bother.

Ingredients:

  • 2 eggs
  • 2 cups milk, brought to room temperature
  • 1/3 cup oil
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tbsp sugar
  • pinch of salt
  • 1/3 cup chocolate chips

Method:

  1. Separate eggs and beat the whites until foamy and stiff
  2. Combine wet ingredients, including the yolks of the eggs
  3. Combine dry ingredients, then mix everything together
  4. Gently fold the beaten egg whites into the mixture, then the chocolate chips.
  5. Make into waffles using the instructions on your waffle iron
